Grilled Brioche with Ricotta & Berries

We’ve been in a brunch mood lately. When you think about brunch, you think about a big crowd, but you can also have brunch at home with your family. It’s always nice to take it slow after a busy week and enjoy a nice thought-of meal with the ones we love. You can try our Veggie Breakfast Casserole if you want to cook ahead, but if you are looking for something with a sweet tooth in mind, try this Grilled Brioche with vanilla-flavored whipped ricotta and berries.
The berries are macerated, which means that you let them sit with some sugar so they release their natural juices, you could add a little liquor, but instead of using it we added 1 tablespoon of orange juice, so it is appropriate for the whole family. In our case, we were sharing this brunch with the Little Foodie.
We didn’t know whipped ricotta was such a treat! It’s smooth, fluffy, and much more spreadable than regular ricotta… with a soft vanilla undertone that pairs perfectly with the macerated fruit and sweet honey flavor. Since this is not as smooth as cream cheese, you’ll still get a texture, but much milder than if it was plain ricotta.
At Almacenes Siman, we found a George Foreman Grill (just like the one Helga has since she got married!) perfect to make those grill marks on the brioche bread. Make sure you get a good brioche, or if you prefer, you can replace it with pound cake. If you do, add a little more grilling time, as the pound cake will take longer to brown. Back to the goodies, we also got a square bowl to serve the berries at the table (in case someone wants more berries) and a long ceramic platter with steel handles (perfect for serving the prepared grilled brioche) and to finish it off, a great placemat with geometric shapes in black and white that makes all the berries’ colors pop.

Grilled Brioche with Ricotta & Berries
Recipe from The Noshery
Serves: 6
Ingredients:
6 slices brioche bread
3 cups blackberries
3 cups strawberries
1 tablespoon orange juice
¼ cup brown sugar
½ teaspoon powdered ginger
2 cups of ricotta cheese
1 teaspoon pure vanilla extract
cooking spray
honey
mint leaves
Procedure:
- Wash and rinse the berries in a colander. Add them to a large bowl, along with the sugar, orange juice, and powdered ginger. Gently toss, cover with plastic film, and place in the fridge.
- Add the ricotta cheese into the bowl of a food processor. Add the vanilla and pulse a few times until it’s light and fluffy. Transfer to a small bowl and refrigerate.
- Heat your grill to medium-high heat according to its instruction manual. Spray the surface lightly with cooking spray and place the brioche until lightly toasted, about 10-15 seconds, depending on your grill.
- Spread the whipped ricotta on the grilled brioche slices, and top with the berries. Drizzle honey and garnish with mint leaves. Serve immediately.
