Hot Rice Cereal

Do you have leftover white or brown rice? You can use it to make this hot and hearty breakfast cereal, which is especially comforting in chilly mornings. You could also cook some rice beforehand, so when you feel like making this, you already have cooked rice waiting for you in the fridge.

All you need is cooked rice, milk and sugar. You heat everything up and let it slightly thicken, the extra vanilla is optional…but you should add it at the end so it doesn’t evaporate. You can add any topping you like, such as raisins, dried cranberries, fresh berries, or nuts with a drizzle of maple syrup or regular honey on top. This is a great breakfast option for kids as well, especially if you make it with brown rice, as it aids in digestion.

This recipe is enough for 2 people, but you can easily add up or down. Basically use ⅔ cups of milk for each cup of cooked rice. The added sugar, is to your taste.  I sometimes use maple syrup or stevia to sweeten my cereal.

Recipe adapted from Everyday Food

Ingredients:
2 cups white or brown rice
¾ cups milk
2 tablespoons sugar
1 teaspoon vanilla extract

Toppings (your choice!)
Raisins
dried cranberries
nuts
fresh berries
maple syrup

Procedure:

  1. Place cooked rice, milk and sugar in a medium sized pot, and bring to a boil over medium heat.
  2. Once it comes to a boil, lower the heat and let it cook for about 3 minutes so it thickens up a little.  Add vanilla extract.
  3. Serve and add desired toppings.
