Baked Eggs Skillet with Avocado

Sometimes, we don’t feel like eating pancakes on the weekend, instead we crave something savory for breakfast like these baked eggs; especially if our daughter is away at her grandparent’s house….and we might be a little hungover tired. You can use store-bought salsa for this recipe, but we prefer to use fresh tomatoes and onions. Some diced jalapeños would be a wonderful addition if you like spicy food, and corn tortillas (tostadas) would be excellent with this.

The only special equipment you need is an oven-proof skillet, or a cast iron skillet. You prepare the vegetables in it, add the eggs and pop it in the oven for 10 minutes. That’s it. Keep your eye on the egg whites until they start looking done, 10 minutes in the oven for me resulted in over cooked yolks, for my taste. Start checking at 8 minutes.

Baked Eggs Skillet with Avocado

Recipe adapted from Kalyn’s Kitchen
Serves: 2

Ingredients:
2 plum tomatoes, diced
½ an onion, diced
1 ripe avocado, sliced lengthwise into 10 slices
1 cup cilantro leaves
salt and pepper, to taste
4 eggs, at room temperature

Procedure:

  1. Preheat oven to 400F/200C. Break eggs into individual ramekins.
  2. Spray a medium-sized oven-proof frying pan with non-stick spray or brush with oil, add the onion and let it cook until it’s translucent, about 3 minutes. Add the tomatoes, and start to simmer over medium heat.
  3. While the tomatoes simmer, peel the avocado, cut in half, and then cut each half into 5 thin slices. When all the liquid has evaporated from the tomatoes (about 4-5 minutes), turn the heat to low and add the cilantro leaves.
  4. Arrange the avocado slices around the pan. Gently put each egg between two avocado slices, spacing them evenly apart. Season to taste with salt and black pepper.
  5. Place the skillet into the pre-heated oven and bake until whites are completely set and the yolks are done to your liking, about 10 minutes for runny yolks.
  6. Sprinkle with additional cilantro, and serve immediately.
