Waffle Express Duo: BLT + Ice Cream Sandwich

At The Foodies’ Kitchen we are developing recipes for specific product brands to give you creative ideas for products you might find on your supermarket shelves or frozen food section, such as Waffle Express waffles, a local business that makes delicious Belgian waffles.

Waffle Express frozen waffles are made with natural ingredients and are available in original or gluten-free varieties. Whole grain, orange and poppy-seed flavors are also available upon request. You can find them served at Club Alemán, zone 15 or at the frozen food section of select stores:

  • Puerta del Sol, zone 10
  • Super Verduras, zone 10
  • LeCafé DecoCity, Carr. a El Salvador
  • Fresko, Plaza Varietá zone 16

These waffles are already baked, just pop them in the oven or toaster for an easy breakfast. You can serve them with maple syrup, honey or fruit. Or you can take a more adventurous and sweet road and serve them with banana and Nutella. But, what if you could do so much more with them? Like a quick dinner. Or a snack. See, the beauty of these waffles is that you can create many different dishes with them. This was our inspiration for this Waffle Express Duo: a BLT with Cheddar Cheese, and an Ice Cream Sandwich. You just need a few ingredients to give these waffles a twist and serve a different kind of treat at home! You can find them on Facebook!

Waffle BLT with Cheddar Cheese

A Foodies’ Kitchen Original Recipe,
developed exclusively for Waffle Express
Yields: 4 servings

Ingredients:
8 Waffle Express frozen waffles
4 to 6 bacon strips
1 tomato, thinly sliced
4 romaine lettuce leaves
2 tablespoons  mayonnaise
½ teaspoon of Sriracha or any spicy sauce
4 slices of cheddar cheese

Directions:

  1. Pre-heat your oven to 300ºF.
  2. Heat a medium-sized skillet, and cook the bacon strips until crisp, about 3 minutes on each side. Remove from skillet and place them on a kitchen paper towel so it absorbs the excess fat.
  3. Place your Waffle Express waffles on a baking sheet and heat them for 10 minutes.
  4. While the waffles are heating, mix the mayonnaise and Sriracha (or other spicy sauce) to add an extra layer of flavor and spiciness to your BLT.
  5. After the 10 minutes of heating time are up, leave 4 of your waffles on the baking sheet and top with the cheddar cheese slices.Place back in the oven for 1 minute, or just enough so the cheese starts to melt.
  6. For the bottom of your BLT, place a waffle on a plate. Layer in the following order: lettuce, tomato, bacon and Sriracha mayo. Top with the remaining waffles, cheese side down.
  7. Serve immediately.

Waffle Ice Cream Sandwiches

A Foodies’ Kitchen Original Recipe,
developed exclusively for Waffle Express
Yields: 4 servings

Ingredients:
8 Waffle Express frozen waffles
6 ounces semi-sweet baking chocolate
Sprinkles
1 pint of vanilla ice cream
1 tablespoon of coconut or vegetable oil (optional)

Directions:

  1. Pre-heat your oven to 300ºF.
  2. Place your Waffle Express waffles on a baking sheet and heat them for 10 minutes.
  3. While the waffles are cooling, melt the chocolate in a water bath, that is a bowl over a pot of simmering water, where the bowl is not touching the water. Melt your chocolate until it’s smooth. If your chocolate is not as runny as you see in the picture, you can add up to a tablespoon of coconut oil to smooth it out.
  4. Prepare a baking sheet with a cooling rack. Dip one of the sides of the waffle in the chocolate, shaking the excess chocolate and placing it on the cooling rack. Coat with sprinkles. Repeat with the rest of the waffles.
  5. Place the waffles in the refrigerator so the chocolate hardens.
  6. For assembly, place one waffle as the base of your ice cream sandwich.
  7. Scoop one medium sized serving of ice-cream on top of each waffle base (the ice cream should be hard, but scoopable)
  8. Top with the remaining waffles and press down to allow the ice cream to spread slightly.
  9. Place in the freezer until firm, for at least one hour.
  10. Take out of the freezer and serve immediately.
