Mushroom Ceviche

Ceviche is more commonly known as a seafood dish, marinated in citrus juice. This is prepared in the same way, except you use mushrooms.
We have a winning recipe here! The only thing I changed in it is that I used regular white onions instead of red ones, but only because those were the ones I had at home. You can prepare this as an appetizer for a party (paired with saltines or small toast), or as an entree. It’s perfect for hot summer days!

Mushroom Ceviche
Recipe Adapted from All Recipes
Serves 6
Ingredients:
1 lb sliced fresh mushrooms (white mushrooms)
1 cup chopped red onion
2 cups tomatoes, diced
1 cup chopped cilantro
1 chopped habanero pepper (optional)
¼ cup olive oil
salt and pepper, to taste
4 to 5 limes, juiced
Directions:
- In a plastic or ceramic bowl, mix all ingredients, except lemon juice.
- Add lemon juice after all the ingredients have been properly mixed.
- Let it sit for about 40 minutes before serving.
- Check the seasoning and adjust salt and pepper, if needed.
