Radicchio & Raisin Salad with Lemon Vinaigrette

Radicchio can sometimes be found at the supermarket or maket in Guatemala. I got a couple of them from a nearby market so I could try a different salad option for weekly lunches. One does get tired of green… even more so when one is not really a salad person.
I really liked this recipe, the only thing I changed were the raisins. I didn’t have golden raisins at home, so I used the regular ones. The bitterness of the radicchio blends very well with the sweetness of the raisins, and this fresh citric vinaigrette is a great combination.

Radicchio & Raisin Salad with Lemon Vinaigrette
Serves 4
Recipe from Martha Stewart
Ingredients:
2 teaspoons sugar
¼ cup Lemon Vinaigrette
2 heads radicchio (about 1 pound total) quartered, cored, and thinly sliced
½ cup golden raisins
Coarse salt
Ground pepper
Directions
- In a large bowl, whisk together sugar and Lemon Vinaigrette.
- Add radicchio and cup of raisins; toss to combine. Season with salt and pepper
Lemon Vinaigrette
Makes 1 ½ cups
Ingredients:
¼ cup fresh lemon juice (from about 2 lemons)
¼ cup white-wine vinegar
2 teaspoons sugar
1 teaspoon coarse salt
¼ teaspoon ground pepper
1 cup olive oil
Procedure:
- In a medium bowl or jar, combine lemon juice, vinegar, sugar, coarse salt, and ground pepper.
- Whisk, or cover and shake, until salt and sugar have dissolved.
- Add oil; whisk or shake until thoroughly combined. Refrigerate in an airtight container up to 2 weeks.
