Bacon & Brown Sugar Waffles

Can you think of a more perfect combination than bacon and maple syrup? And what is it about this time of year that makes you want to eat these sorts of things? It’s not just the weather getting colder, because it’s not too cold where I live and I’m all about cheese sandwiches and hot soups right now, waffles, cookies, and cakes. (I fear for my butt…)

Comfort foods have a nostalgic element to them, they make us think back to the dishes we had as children made to us by our moms or grandmothers. There are some staple foods that are part of specific holidays, or family gatherings that take place during this time of year, which brings us back to feeling nostalgic.

Bacon-Brown Sugar Waffles

According to Webster’s Dictionary, the term Comfort Food refers to “foods consumed to achieve some level of improved emotional status, whether to relieve negative psychological effect or to increase positively. More generally, comfort food can be defined as food that brings some form or measure of comfort, sense of well-being, or easy satisfaction. Such food choices may consist of simple and familiar”.

We hope you enjoy the recipes we will be posting on our Comfort Week, and to start it off we encourage you to try these waffles for the weekend. They have bits of caramelized bacon in the batter. This recipe yields 10 waffles, and if you want to have more bacon bits in them, go ahead and bake add more strips. I think I’ll bake 15 strips the next time I make them. (You’re already putting bacon in there, so you might as well go all the way)

Bacon Brown Sugar Waffles

A Foodies’ Kitchen original recipe

Ingredients, for the bacon:
10 slices of bacon
¼ cup brown sugar

Ingredients, for the waffles:
3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
¼ cup of brown sugar
⅔ cups of vegetable oil
4 large eggs
2 teaspoons vanilla extract
2 ½ cups whole milk

Directions, for the bacon:

  1. Preheat oven to 375 degrees F.
  2. Spray a baking sheet with non-stick cooking spray and line with foil.  Arrange bacon in a single layer on the baking sheet.
  3. Sprinkle generously with brown sugar.
  4. Place in the upper third of the oven and bake until sugar is caramelized and bacon is brown and crispy about 10 to 15 minutes.
  5. Remove from the oven. Immediately remove bacon slices using a pair of tongs.  Place them on a cutting board (not paper towels, they’ll stick!) to cool before chopping.
  6. Once cool, chop the bacon into bite-size bits and set aside.

Directions, for the waffles:

  1. Set up your waffle iron on a level, clean surface, and turn on to preheat.
  2. In a large bowl combine flour, baking powder, baking soda, salt, and brown sugar.  Whisk to blend.
  3. In a  medium bowl, whisk together eggs, oil, buttermilk, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and fold.  Once almost fully incorporated, add the bacon bits.  Stir.
  5. Try not to over mix the batter or the waffles will become tough.  It’s ok if a few lumps remain in the batter.
  6. Cook according to your waffle machine instructions.
  7. Serve with maple syrup and strawberries.
