Homemade Chicken Nuggets for Kids

This recipe makes about 44 nuggets! It depends on the size you cut your breast fillets, but that’s how many I got.
This is a healthy way for kids to eat chicken nuggets, because they are baked, not fried; and you know you are making them with chicken breast fillets and not God knows what.
You can make this on a Sunday, have the pieces you’ll feed your child in the fridge, and pop the rest in the freezer. You can heat them up in a toaster oven for a couple of minutes, or in the microwave for just a few seconds. Don’t let them get too dry! The longer you cook chicken, the drier it gets.

Homemade Chicken Nuggets for Kids
Yields: About 44 nuggets
Serves: About 7 portions
Ingredients:
2 chicken breast fillets
2 cup cornflake crumbs
¼ cup parmesan or pecorino cheese
Dried basil
Salt and pepper to taste
1 egg, beaten
Flour, to coat (you will need about 1 cup)
Procedure:
- Line 2 cookie sheets with aluminum foil. Preheat oven to 375
- Cut the chicken breast fillet open with a sharp knife. Once it is flat, cut into small pieces. Set aside.
- In a medium bowl, combine the crumbs, the cheese, dried basil, salt and pepper to taste.
- To cover the chicken pieces in crumbs, put enough flour on a plate, you will use it to cover the chicken pieces. Place the bowl with the beaten egg, next to it, and next to that place another plate with enough breadcrumbs to cover the chicken pieces.
Cover the chicken pieces in flour, then dip then into the beaten egg, and lastly cover them with the bread crumb mixture. Place them in a cookie sheet as you go along.
- Bake for 20 min.
