One easy and fast breakfast is scrambled eggs with cheese and toast… But what about on toast? One Saturday morning Jake had to run to the office, and since he was coming back late after lunch he wanted to have a good breakfast so we could catch an early dinner. I was making breakfast when the idea came to me. I would’ve like to have shredded cheese, but we were running short of supplies so sliced cheese had to be it.

Scrambled Cheesy Eggs On Toast
Serves 1
Ingredients
2 eggs
2 slice of whole wheat bread
2 slices of cheese
Salt and Pepper, to taste
Dried parsley, minced onion and garlic powder to taste
Butter
Procedure:
- Whisk the eggs and season. Make sure the pan is heated over medium-low heat and add butter. Everyhing’s better with butter. If you like, you can use non-stick cooking spray too.
- Toast the bread slices.
- While the toaster does its thing, add the egg mix to the pan when butter is melted and wait for a few seconds until it starts bubbling. The pan must be hot and this is the secret for perfectly scrambled eggs! After it bubbles, you can start pushing the eggs from the sides to the center, making sure to nudge all the scrambled eggs mix with a wooden spoon or heat proof spatula. I like the heat proof spatula better.
- The toasts should be ready by now, so place half of the scrambled eggs on the toast and finish with the cheese on top. Serve immediately.
