Bayou Seasoning

I like to keep a jar of this Bayou Seasoning around. I use it for jambalaya, chili and grilled chicken. Emeril’s recipe is great, however I did not use cayenne pepper in my mix, instead I used Chile Coban, which is a Guatemalan hot pepper with a very smoky flavor.

It is made from dried and smoked Cascabel Peppers which have a rich, deep flavor.

Bayou Seasoning

Recipe by Emeril Lagasse
Yields: ⅔ cup

Ingredients:
2 ½ tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Preparation:

  1. Mix all ingredients, and keep in a closed jar.
